Wilderness Chef: The Ultimate Guide to Cooking Outdoors is a gorgeous and inspiring wild cookery book, from the master of bushcraft. From an egg on a stick to baking bread and conjuring up a delicious roast, Ray Mears takes us from the basics of outdoor cookery all the way through to opulent feasts.

Gather round an open fire. Share delicious food inspired by the outdoors and infused with age-old wisdom. This is living. This is the way of the wilderness chef.

Ray Mears has spent his life travelling the world, living with and learning from native peoples in the desert, the rainforests and the Arctic north. Cooking food in the wilderness has been central to his journey, and in this book he presents us with a delicious array of his most popular and enduring recipes, tried-and-tested for all levels of skill and in all conditions, from quick and tasty meals to opulent gourmet feasts.

Opening with advice on setting up your outdoor kitchen, and cooking techniques time honoured by first nations, hunters, trackers and adventurers, Ray shows how to assess your ingredients, light a fire, cook in ashes and leaves, steam, smoke, and build a ground oven.

He then shares with us his fabulous and enjoyable recipes, including: - easy ideas that children and grown-ups can try out including campfire s'mores, wilderness hot dog, egg on a stick, lemon chicken wrapped in dock leaves - gourmet meals of Italian hunter's rabbit, and succulent split-stick roasted salmon - recipes learned from bushmen and native peoples around the world which include potjiekos, canoe country pancakes, fragrant and intense Gurkha curry.

Woven throughout are colourful stories of Ray’s cooking around the world, from baking a birthday cake using ingredients sourced in the rainforest, to steaming fish Maori-style using bags crafted from Bull Kelp, and pulling a giant Emu leg drumstick out of a ground oven built by a Pitjantjatjara elder in the Central Australian desert.

This is a practical and inspiring book drawing on the love of the outdoors, cooking in the open air and creating delicious food from scratch.

Great book. Hoped to get some tips to improve my meals on my canoe camping trips, however this book has inspired me to do more in the kitchen (e.g. made bread for the first time) on the basis of 'if Ray can do great meals in the wilderness, surely it might just be possible for me to up my own game in the kitchen'. If nothing else, this book has given me confidence to try to do more than just take the usual dehydrated meals with me. Last trip breakfasted on pancakes and syrup which significantly added to the overall enjoyment of that outing. Really pleased to have this book.

An absolutely wonderful gift for my Husband. Not only is it full of useful information, it is signed also, making it even more special. The delivery was incredibly quick from order placement, and packaged incredibly well. Highly recommended book for all the wannabe 'Wilderness Chefs' out there.

A must if you like cooking and nature. I've made several dishes from it including the yakitori chicken, stick bread, bannock, some of the soups and fish dishes and particularly enjoyed the scout cooking section. Not just a recipe book but a guide full of wisdom and useful tips and techniques helpful for planning your trips and understanding the process and products for cooking and dining outdoors. For me I enjoy heading out for trips just to cook and this book has been an inspiration.

Some handy tips and tricks in here plus some excellent guidance on various levels of camp kitchens - I’ve only tried a few of the recipes so far with edible results! Some of the recipes are worth a bit of prior preparation but a lot of applications for the methods described.

I took part in the Tracking course with Ray in 2018 which turned my life around in terms of finding and spotting wildlife, whilst on the course a few of us were chatting to Ray when he mentioned he was writing a new book. Ears pricked up and we were all intrigued, where has he been now? what has he seen and learned?, well apparently it was a cookbook! I did notice a few people visibly recoil including me, what RM writing a cookbook? I bought it anyway, and I'm really glad I did, yet another bushcraft cathartic moment, the first recipe I tried (Sami Soup) was absolutely delicious and completely changed my view on tasteless freeze dried foods for one or two nighters or longer in the forest, how have I never tried this before. I have now cooked several meals and will rarely eat ready foods ever again whilst in the outdoors, brilliant book, super recipes and even a clutz like me can prepare and cook them and the ingredients are healthy, filing and unlikely to languish in the back of the cupboard for long. Thanks for opening a culinary world that had laid dormant for many years.

This was bought as a Christmas present for my son. Communication was very good, shipping was quick and the book was delivered ahead of schedule. I had a sneaky peek before wrapping it and look forward to having some of the recipes cooked for me! My son has been delighted with the book and is enjoying reading it as well as looking forward to cooking up a storm. Great choice!
